Sticky Walnut Bars

I love cakes and treats as much, if not more, than anyone, but I was not brought up feasting on brownies and cookies (habits I learned all by myself). My mother is a wonderful and very traditionally english chef and so a cake to me is a fruity, spicy and reassuringly solid. A cake to me growing up was a fruitcake, and I still have a taste for these more traditional treats.
These sticky bars perfectly appeal to this sweet tooth and are ridiculously more-ish! Made with walnuts, oats and cinnamon they taste really comforting and indulgently stodgy, making them the perfect treat for a mid afternoon slump. They’re full of fibre from the dates and oats, plant protein from the nuts, not to mention cinnamon which is great for regulating blood sugar levels and walnuts which can boost brain power.

1 cup of walnuts
½ cup of ground almonds
2tbsp of cashew butter
¼ cup of maple syrup
8 medjool dates
1 heaped teaspoon of cinnamon
½ cup of oats

Simply put the nuts in a food processor and blend until a flour, then add the rest of the ingredients except for the oats and blend until a very sticky ball. At this stage stir through the oats as best as you can (don’t be frightened to get your hands stuck in) and then press down into a baking tin to set. Freeze for 30 minutes then slice up and keep in the fridge until your ready. Enjoy! x
