Healthy Sugar-Free Flapjacks

It’s been a while since my last post, but I’m back properly this time.  It’s all been a bit crazy finishing my degree and doing temp work, but I’m now very happily interning for a PR agency!  I work from 9am until 6pm which means I get really pretty hungry and I have to be quite good at using my free time productively if I want to keep up a healthy and happy lifestyle with my nutrition, fitness and social life.  This is how I came to make up this flapjack recipe.. I came home from work starving as I hadn’t taken in any snacks and I hadn’t had time to go to the shops.  I was craving something sweet and decided to throw together some of the things in my cupboard in the magimix and see what happened.

These flapjacks are great because they’re free of refined sugars, dairy and can be gluten free depending on the oats you use, but most importantly they hit the sweet tooth spot perfectly and do not taste healthy.  You do need a food processor to make them but they’re incredibly simple.  Please feel free to substitute the nuts for a different kind – almonds work really well, and to use 1 cup of dates or apricots if that’s all you have in.

  • 1/2 cup of pecans
  • 1/2 cups of walnuts
  • 1/2 cup of dates
  • 1/2 cup of unsulphured dried apricots
  • 1 tablespoon of cashew butter
  • 1-2 tablespoons of pure maple syrup
  • 1/2 cup of water
  • 1 1/2 cup of oats
  • Mixed seeds
  1. Combine the nuts in the food processor and blend until a crumbly flour
  2. Add in the rest of the ingredients but the oats and seeds and combine until a thick syrupy paste
  3. Stir in the oats and then press this mixture into a cake tin
  4. Scatter the seeds on top and then bake in the oven at 180 Celsius for 20-30 minutes
  5. Leave to cool/set and then slice up and enjoy
