Banana and Coconut Bircher Muesli

If I run or workout in the morning it means that I normally don’t have time to have breakfast before my early start, but buying breakfast to go is either unhealthy or expensive, and often both.  I need something that tastes good and that will help strengthen and refuel my body after a morning session!

I find overnight oat recipes and jam jars a lifesaver in these situations as I can simply take a tasty, filling and healthy breakfast in my bag with me to eat when I get to work.  Even if you’re not taking breakfast to go this will save you a lot of time in the morning, just prepare the night before and enjoy in the morning.

  • 1 banana
  • 160ml of coconut cream and 1/4 cup of water or 125g of coconut yoghurt and a 1/2 cup of water or 1/2 a cup of coconut milk
  • 1/2 cup of oats
  • 1 tablespoon of mixed seeds
  • Handful of raisins

To whip this up simply blend your banana and coconut/liquid mixture to make a smoothie like thick liquid.  Mix this with your oats in a bowl/jar, followed by the seeds and raisin. Allow this to thicken up overnight and you’re done!

A nourishing and filling breakfast that can be made in minutes and tastes delicious
