Cacao, Cashew and Chia Overnight Oats

This is one of the most wonderfully indulgent ways to start the day! It’s delicious, filling, nourishing and so convenient. All you have to do is mix everything the night before so your ready to go in the morning if you have an early start, a morning workout, or just fancy a lie in and a treat at your desk. I guarantee that the last mile on the morning run or set in the gym will be a lot better knowing you have this to come out to!

This is packed with protein, good fats and complex carbs that are going to keep you full until lunch. Whilst everything in this recipe has benefits for you and your body, the superfood heroes are cacao and chia seeds.

Cacao is full of antioxidants and magnesium, helps to regulate blood sugar, keeps your skin, nails and hair in good condition, and is an amazing mood booster. For me the real winner about cacao is the fact that it means I get to indulge my sweet tooth and love of chocolate without being too naughty.

Chia seeds are full of fibre, antioxidants, protein, omega-3 fatty acids and work a little miracle in keeping you full.

I’m lazy and make this using my blender, but if you don’t have one then mash the banana until it’s smooth and really make sure the ‘wet’ part of the recipe is well mixed. Finally, I find some recipes can seem a bit of a faff to make or overly expensive – if you don’t have chia seeds or find them hard to buy then simply leave them out.

1 banana
3/4 cup of water
1 heaped teaspoon of cacao
1 teaspoon or desertspoon of cashew butter – if you’re planning on having this after a big workout I’d recommend the latter, but otherwise it depends on what you have in or how rich you like your food.
1 teaspoon or desertspoon of coconut oil – if you’re planning on having this after a big workout I’d recommend the latter, but otherwise it depends on what you have in or how rich you like your food.
1/2 cup of oats
1 handful of raisins
1 teaspoon of chia seeds

Blend the banana, water, cacao, cashew butter and coconut oil until you have a smoothy runny smoothie consistency. Place the oats, raisins and chia seeds in a jar or bowl and stir through the smoothie mixture. Leave this to set in the fridge overnight and you’re ready to go!
